Blackened Tilapia With Butter Lime Sauce

As promised before, today I would like to share a healthy and delicious fish meal;

Blackened Tilapia with Butter Lime Sauce

Ingredients:

1 Lime
2 Tbspoon chopped fresh cilantro (NOTE: daun ketumbar, in Malay or also known as Coriander/Chinese parsley)
2 Garlic Cloves, finely minced
1 Tbspoon canola oil
4 tilapia fillets (abt 170g each)
2 Tbspoon blackening seasoning (refer here for method to prepare it yourself)


Method:

Grate 1 teaspoon of lime zest, and then halve the lime and squeeze the juice (from both halves) into a small bowl. Add butter, cilantro and garlic; stir to blend. Set aside.

Heat the canola oil ( I used olive oil) in a pan over high heat. Rub the tilapia fillet all over wih the blackening seasoning. When the oil in the pan starts to lightly smoke, add the fish and cook undisturbed until the spice rub becomes dark and crusty, 3 to 4 minutes. Flip and cook until the fillets flake with gentle pressure from your finger, about 1 to 2 minutes more.


Transfer the fish to four serving plates and immediately top each fillet with a bit of flavoured butter (the sauce). Serve in 15 minutes time! ;)

Blackened Seasoning

The other day, hubby requested me to cook a healthy menu for our dinner. He suggested me to try on a fish dish; blackened fish dish in particular. Found out a healthy blackened fish dish from Men's Health magazine and decided to try it cause we both were sooo tempted by the illustration of the dish..!


One of the main ingredients to prepare the dish is the blackened seasoning. I went to Jaya Supermarket but couldn't find it at the spices area. Too lazy to check out other supermarket, I just bought all the spices needed and decided to prepare my own blackened seasoning; something I want to share with you today :)



Blackened Seasoning






Ingredients:

2 teaspoons ground paprika

4 teaspoons dried leaf thyme
2 teaspoons onion powder
2 teaspoons garlic powder
1 tablespoon granulated sugar
2 teaspoons salt
2 teaspoons black pepper
1 teaspoon ground cayenne pepper, or to your taste
1 teaspoon dried leaf oregano
3/4 teaspoon ground cumin
1/2 teaspoon ground nutmeg







Method:

Place all the spices into an air-tight jar or a ziplocked bag, and shake well to mix them up. Labelled it as the Blackened Seasoning and store it in a dry, dark area.
Easy, peasy...Now you can marinate/season either fishes, seafood or even chicken with this seasoning and have a nice easy peasy meal. What to do with the remaining spices from the ingredients? You used it to prepare other seasoning or just used it for other meal ;)

Twinnies at 8 Months


Our twins turned 8 months old last two weeks and just like any other babies out there, they continue to amaze us each and everyday...subhanallah :) Both of them has grown bigger, taller and a bit chubbier, I think. Their hair are also more visible now, hihi. Both can sit on their own steadily (finally! :). Similar to Faaz, both babies are friendly and rich with smiles. Just smile and cheer them a bit, they will give you the brightest smile that will melt your heart... trust me! :)

This month especially, they have reach a lot in terms of personal milestone. For example, since last month, we've been waiting for them to crawl as they already in the position, except they don't know how to move from that position. Instead of crawling, they surprised us by....



Standing!



It was Falisya who started it first...mama caught her trying to stand by holding her hands at the walker while Faiqa was playing inside it. Thank God mama realized that before Faiqa moved or else, hmmm I don't want to imagine! The above photo was taken by me, caught her with my own eyes trying her best to stand up by holding the bed frame..girl, you definitely have a pair of strong hand! ;)

Few days later, Faiqa follow suits. This girl is very slow at making moves, but steady...she tried to stand up not from the ground, but from the playpen! She sat on her knees, held her hand on to the edge of the playpen and confidently trying to stand. When I shouted out of worry and surprised at the same time, this was her reaction; smile excitedly! T_T



Alhamdulillah, last two days Falisya has started to crawl for 5 steps! I was over the moon because this time, I was the first to witness her achievement. I am sure Faiqa will do the same very soon, insyaAllah. Mudah-mudahan mommy can witness that too, darling :)


In terms of behavior, they have shown more sides of their own personality which highlight that although they are a pair of twins, they still a different person individually :)

Faiqa is a more laid back, relax person in nature. But, she tend to get excited very easily. Just offer her a wide arms, she will kicked her legs and giggled excitedly as you carry her :) Whenever we sing "Twinkle Twinkle Little Star" to her, Faiqa will raise her hand and starts to make the star with her chubby fingers...geramness! Hihi...Oh, she will nod with rhythm when she hear the songs that she like.


Unlike Falisya, Faiqa is more passionate about food as she LOVES to eat anything that we feed her and she loves to lick almost EVERYTHING (read: everything yer) that is near to her mouth :P Not only she smiles a lot, she get easily tickled too. Just do any movement and she will laugh to the max! Here's a clip of her laughing over me jumping (pardon me, yes I know I sound silly in this clip :P)

Miss Falisya on the other hand is a hyperactive baby. She will not sit still even for a minute. One minute she will be on the left corner of the house and the next minute you'll find her at the opposite corner. One of the things that she loves to do besides standing up is to open the drawers. She will crawl on her stomach to the TV cabinet and grabbed the handles and tried to pull it out...


Even in the walker, a minute you'll find her in the dining area and the next thing you'll realized she already be in the kitchen..hihi. It's hard to leave her alone anywhere! Her eyes will ALWAYS busy scanning everything near her. Fast to grab things, and cheeky! We put her inside the playpen to sleep and all she did was rollover and peeked to watch cartoon on the television :P. Falisya LOVES music. Just make any rhythmic sound and she will moves her head and shoulders to the left and right.

One of the things that make her laugh and excited is to be on top of his daddy's shoulder and play with his thick hair....oh, it's her favorite! Daddy's little girl, huh? :)



At the age of 8 months, both girls get to attend their friend's birthday party for the first time (the actual first birthday party they attend was their brother's so it doesn't really counted). It was Zahra's 1st birthday, the daughter of our uni close friends; Azah & Basid. It's amazing to see how the girls interact to each other via sounds and gestures. They really show interest towards each other! Nanti dah besar jadi friends macam Mommy and aunty Azah yer :)


Raising a pair of twins is not an easy task, it took double effort to almost everything. But, it really incomparable to the wonders the twins brings into our lives, such as the double of happiness and joy. Alhamdulillah, Thank you, Allah. May WE (me and Fadzil) both be given the guidance and perseverance continuously to raise all our children to be a good Muslim, insyaAllah...

MISF 2012

Good news to all shoe-o-holic out there,


The Malaysian International Shoe Festival (MISF) is back again this year! weeeeee! ;)

If you remember, I did blog about it
here last year, stating how much I wanted to attend the festival but ended up missing it again as I was heavily pregnant with the twins *sob*. This time around, I'll make a point to attend MISF cause it's larger than last year with so many things to see and to experience!

Oreo (100th Birthday) Hot Air Balloon

I was on the bus, getting down from Awana Genting Highland when I logged into my twitter account. While I was reading my timeline after posting a tweet, I saw few bloggers tweeting about Oreo hot air balloon ride and retweet (RT) contest. That includes ceeramoon and thepinkstilettos...


Since it says that the 10th person to RT the tweet, I told myself why not I just re-tweet it to help others to achieve the 10th person quicker? So I did it, without any expectation. Few minutes later, my phone made a sound and when I checked, there was a tweet for me. To my surprised.....


Huh?? Me?? Wow...!! Nak tergelak pun ada cause I really didn't expect to win myself. Rezeki they said :) So thanks to Iza, I won myself 5 tickets (2 adults and 3 children) to Oreo 100th Birthday hot air balloon ride! Weeeee!


Because of this, I finally visit Nuffnang office for the first time last Friday when I came to collect the tickets. Hihi..


The event was held last Sunday at Padang Astaka PJ, which is quite near to Subang Jaya, about 15 minutes drive through Federal Highway. Actually, there were 2 sessions of the hot air balloon ride; morning (starting from 8.30am) and night (starting from 9.30pm). We went for the night ride. As it was stated at the back of the ticket that the minimum height for the hot air balloon was above 3ft, we decided to leave the twins with the grandparents. Nanti dah besar macam Abang leh ikut ye adiks :)


We arrived at 9pm, it was raining that evening so the field was quite muddy. Nevertheless, it did not stopped us to proceed. Excited kot, first time to ride on a hot air balloon..hihi :)

We were greeted by Oreo staff with of course a jar of oreo cookies...nyum! We then headed straight to the registration counter where we have to fill in our particulars and signed in the individual consent form. We then proceed to the balloon ride entrance and queued..

Oreo cookies were everywhere and ready to be grabbed...all for FREE :)

As the queue moved further and we have a closer glimpsed of the hot air balloon, Faaz became worried. I asked him why, and at first he answered,

"Mommy, balloon can go up only....how we want to go down?"

I explained to him about the function of the hot air, and still he looked worried. I asked him again,

"Are you afraid, Faaz?"

Nodded, he said,

"I'm scared of the fire. Later if Faaz go inside the balloon the fire will burn my head.."

Hehehe...

Again, I had to explain the function of the "fire" that produce hot air for the balloon to move. To convince him further, I asked him to see how a child in front of us had his hot air balloon ride and came back to ground safely...

"See Faaz, did the boy burn his head? No, right? He looked happy! You should too!. Don't worry, mommy and daddy are here with you" :)

He nodded, but still frowning. I just prayed that he will not make any scene when our turn came...which was coming really soon!

Alhamdulillah, Faaz did not make any scene...BUT, he was really scared of the flame from the hot air. Pity him. He would closed his eyes whenever he heard the sound of the flame (busting?)...

Us, at 45 meters above ground. It was quite hot up there..huhu.

Although the balloon did not went up higher as we were hoping for, it was indeed a new experience for us three, thank you so much to Oreo :)

After the 15mins ride, we have some refreshments before heading to the other section, the games section. Here, parents and children get to play some games, whoever wins will get packs of Oreo cookies.

Happy 100th Birthday to Oreo! We wished you many many more successful years ahead :) Thank you for organizing a celebration of togetherness. We really had fun, especially our Oreo cookies lover son, Faaz Naqi :)
